The literal wording of the name is "Yellow Mountain Fur Peak". The most perfect Mao Feng is harvested in early spring, before the start of the Qingming festival. Of course, only the youngest leaves are plucked, more precisely the tip and the second leaf from each branch (Orange Pekoe). The infusion is very delicate, tinting the water with a light amber color. The taste is subtle, silky, devoid of tartness, roughness and any smoky or earthy nuances. With such a subdued infusion, the quality of the water is of great importance. To brew Huangshan Mao Feng, we should use spring water - very soft, i.e. with a mineral content below 80 mg per liter.
